Nutmeg is a well-known spice, used primarily in stews and sauces, with the most familiar example being sauce béchamel.
The nutmeg supplied by Mill&Mortar reaches you in its shell - conserved just as nature intended. Nutmeg is a fascinating spice, delivering in fact two somewhat different spices. One is the nutmeg itself (the nut) and the other is the nutmeg flower or mace (which is not actually a flower but an aril around the nut). All this is encased in a shell just like the horse chestnut, which cracks once ripe. Nutmeg is a well-known spice, used primarily in stews and sauces, with the most familiar example being sauce béchamel. The nutmeg flower is lesser known but can be used in the same way as the nut - whole in stews, marinades and stocks, or added to sausage. The flavour is less intensive compared to the nut, with a slightly sweet undertone which makes it a wonderful addition to cakes and desserts, especially when combined with chocolate or whipped cream. The nutmeg flower is also an ingredient in the classic Indian spice Garam Masala. Mill&Mortar’s nutmeg comes from the farmer’s cooperative in Pilimathalawa, Sri Lanka and reaches you in its shell, for optimal flavour and aroma preservation. The flower is orange-red and whole. Crack just as you would a chestnut. You can use the flower whole or in bits (you can use a mortar or a coffee mill).
