White pepper is used in Chinese and Thai cuisine but also in salads, sauces and mashed potatoes.
White pepper has a more intensive peppery flavour compared to black pepper. The peppercorns are left to ripen fully in the shell (unlike the peppercorns for black pepper) which turns a bright red. The berries are then washed to separate the shell and gives us the white corns. This white pepper comes from the Thysmada area in Sri Lanka.
Ingredients: smoked white peppercorns.
