It is a common ingredient in several spice blends for Danish meatballs, liver and other types of pâté, red cabbage pickles, soups and sausages. In the sweet kitchen, allspice lends itself beautifully to biscuits, apple compote, apple tarts and pies.It is often used with cinnamon and cloves.
For a more exotic seasoning, use allspice in casseroles instead of pepper. It can be ground in a mortar and pestle or a coffee grinder or even used whole.
