Ruby syrup is prepared on sticks of cinnamon, cardamom seeds, whole ginger and black pepper, which are combined with cloves, nutmeg and dried pieces of pineapple, which adds a slightly fruity aroma. 1 bottle of ruby syrup is enough to mix two bottles of 750 ml wine or an equivalent amount of juice.
You can serve the ruby mulled wine with the traditional filling of almonds or raisins soaked in port wine or other alcohol, or test with fresh pineapple for a slightly fresher taste. Ruby syrup is mixed with the wine and heated carefully - it should not boil. If desired, you can add sugar to your taste. It can be prepared in advance and only warms up before serving. The strength of alcohol can be reduced by completely or partially replacing the wine with blackcurrant juice, grapes or elderberry - and can be increased by adding portwein, schnapps, rum, vodka or cognac.
