FOR THE COFFEE

Taith introduces this expressive Orange Wush variety from Jardines del Edén, grown at 1800 MASL in Armenia, Colombia. The farm is led by Felipe and Carlos Arcila, who come from a long lineage of coffee producers. Carlos, in particular, has fond memories of walking the farm with his grandfather, sampling cherries from different trees and deepening his appreciation for variety and terroir.

This particular lot is processed using Jardines’ innovative EF2 method, designed to intensify sweetness and complexity. The process begins with a 24-hour dry aerobic fermentation of the freshly picked cherries. Once complete, the cherries are sealed in Grainpro bags for an additional 50 hours of fermentation at temperatures below 22°C.

After this carefully controlled fermentation, the coffee is dried on raised beds until the moisture content reaches 11%, preserving its vibrant and layered flavor profile.
