This coffee is processed using the Wave Natural method. First, the coffee cherries undergo a 24-hour fermentation period in tanks, utilizing wild yeast. Next, they are dark room dried.

Pepe was a passionate mountain climber and guide who climbed the 7 Summits, a journey that deepened his love for nature and environmental advocacy. After a motorcycle accident left him with paralysis in his right wrist, he bought land in the Intag valley, initially to plant trees and find solitude, with no interest in coffee at the time. Over the next 12 years, Pepe faced numerous challenges starting his coffee farm, but a pivotal experience at World of Coffee Milan in 2021 sparked a new direction as he connected with the global specialty coffee community.

Taith means “journey” in Welsh – and that’s exactly what you can expect from every coffee they roast. Based in Lewes, UK, Taith is a small, independent roastery with a passion for sourcing rare and expressive coffees from producers who push boundaries and grow with care.

Each lot is a reflection of origin, process, and people – always seasonal, traceable, and roasted with precision. From vibrant washed Ethiopians to experimental Colombian fermentations, Taith’s coffees are clean, characterful, and full of surprises.
