We picked this coffee because it’s a rare gem from Sumatra that breaks all the rules - in the best way. While most coffees from the region are bold and earthy, this washed lot from Putra Gayo Mill caught our attention with its unexpected clarity, caramel sweetness, and cocoa depth. Add in that gentle plum jam note, and it was an easy “yes” from us.

It’s elegant, balanced, and full of flavour - exactly what we look for when selecting coffees for our Flavour Collection. This one proves that expressive doesn’t have to mean loud - it can also mean layered, sweet, and beautifully smooth.

Toffee Drift comes from the highlands of Pantan Musara, in the Aceh Gayo region of Sumatra, an area known for its altitude, volcanic soil, and rich biodiversity. This coffee is produced at the Putra Gayo Mill, one of the few mills in the region experimenting with fully washed processing, rather than the traditional wet-hulled method that most Sumatran coffees are known for.

The cherries are grown by a community of smallholder farmers at altitudes ranging from 1400–1700 meters, then hand-sorted to ensure only the ripest fruit is selected. After depulping, the coffee undergoes a classic washed process, including fermentation, washing, and slow drying on raised beds - an approach that allows its flavour clarity and complexity to shine through.

The result is a coffee that defies expectations. In the cup, you’ll find a rich, comforting base of caramel and cocoa, lifted by a gentle layer of plum jam and soft fruit acidity. It’s sweet, structured, and smooth, with a clean finish that lingers just long enough to keep you coming back for another sip.

Нашето приключение с печене на кафе започна през 2021 г., когато решихме да “изпечем нещата сами” за Българския Шампионат по Аеропреса. Това, което започна с Roest, прерасна в нещо много по-сериозно (и вкусно). През 2024 г. ъпгрейднахме до Stronghold S7 Pro – защото, ако ще правим магия, нека е с най-добрaта пекарна за кафе. Всяко кафе в нашата селекция минава теста “Уау!” на къпинг масата и трябва да удари поне 2 точки, за да влезе в отбора (тоест да се хареса от поне двама от екипа ни от трима). Главният пекар Христо е човекът зад всяко изпечено зърно - перфекционист, който няма да одобри профил, докато чашата не е магична. Всеки клиент е тестър, чиято обратна връзка нямаме търпение да прочетем и чуем, за да ставаме по-добри.
