This beautifully clear Panamanian Gesha grown at 1,570 MASL offers bursting citrus aromas and leaves a lasting impression of fruity sweetness.

Nestled in the cloud-forests of Panama near the Costa-Rican border, lies the stunning Finca Santa Teresa (FST). A place of incredible natural beauty, La Amistad National Park (a UNESCO World Heritage Site) and Panama’s highest peak, the Volcan Baru, are close neighbours to the farm.

Rich volcanic soils, high altitudes and weather systems driven from the Pacific and Atlantic down the ridges and valleys of the region combine, creating a perfect micro-climate for the curation of some very special lots.

Zorro occupies a beautiful location which faces the sunrise, and benefits from good shade from surrounding native trees. The natural processing is achieved by picking the cherry when fully ripe, within hours it is spread out on raised beds under high altitude sun. The cherry is then turned every few hours for even drying. This process takes a little over 2 weeks. The drying is finished in the oven to help with evenness of moisture and water content before hulling.

The approach at FST is one of simplicity and care, with harvesting techniques honed to perfection over many years and seasons. The results of this strategy speak for themselves—FST has been a regular finalist in the Best of Panama competition, receiving with more than a dozen awards over the last decade.
