This exceptional honey processed lot comes from Finca La Hondurita, a small 4.3-hectare farm located in the highlands of Chalatenango, El Salvador, at elevations between 1,500 and 1,550 MASL. The farm is owned by producer Fito Montiel, known for his innovative approach to coffee fermentation.

Like many pioneering producers working with extended fermentation techniques, Fito keeps his exact method a closely guarded family secret. But here’s what we do know:
• Only fully ripe cherries are hand-selected at harvest.
• The cherries undergo a controlled fermentation lasting 192 hours, using a carefully cultivated mix of fungi and bacteria cultures.
• After fermentation, the coffee is slow-dried on raised beds for around 30 days, allowing complex flavours to fully develop.
• The dried coffee is then rested for at least 60 days before final processing and export.

The result is a refined and layered cup, shaped by time, precision, and the unique microclimate of Chalatenango. A truly special lot that reflects Fito Montiel’s dedication to craft and experimentation.

Roasting takes place in their state-of-the-art Oxford facility, where each batch is carefully crafted to highlight the unique flavors inherent in the coffee.
