This exceptional coffee comes from Granja Paraíso 92, the innovative farm of Wilton Benitez in Piendamó, Cauca, Colombia, located at an elevation of 1900 MASL. Renowned for his groundbreaking processing methods, Wilton combines his background in chemical engineering with decades of coffee-growing expertise to create some of the most unique and memorable coffees in the world.

This lot, featuring the Red Bourbon variety, undergoes a meticulous sugarcane decaffeination process, which naturally removes caffeine while preserving the coffee’s vibrant flavors. The cherries are carefully fermented in an anaerobic environment for 48 hours, enhancing their fruity and citric notes. They are then dried for another 48 hours at 38°C, locking in their unique profile.

In the cup, expect a clean, silky body with rich, sugary sweetness and complex flavors, including notes of red fruits, gentle citrus, and caramel-like depth. Нашето приключение с печене на кафе започна през 2021 г., когато решихме да “изпечем нещата сами” за Българския Шампионат по Аеропреса. Това, което започна с Roest, прерасна в нещо много по-сериозно (и вкусно). През 2024 г. ъпгрейднахме до Stronghold S7 Pro – защото, ако ще правим магия, нека е с най-добрaта пекарна за кафе. Всяко кафе в нашата селекция минава теста “Уау!” на къпинг масата и трябва да удари поне 2 точки, за да влезе в отбора (тоест да се хареса от поне двама от екипа ни от трима). Главният пекар Христо е човекът зад всяко изпечено зърно - перфекционист, който няма да одобри профил, докато чашата не е магична. Всеки клиент е тестър, чиято обратна връзка нямаме търпение да прочетем и чуем, за да ставаме по-добри.
