ABOUT THE COFFEE

Volcán Azul, under the management of Alejo Khale Castro, has become synonymous with excellence in specialty coffee. Alejo’s commitment to quality and innovation has earned Volcán Azul consistent recognition at the prestigious Cup of Excellence (COE), including a 2nd place win in 2017, and two placements each in 2020 and 2021.

For this coffee, cherries are pulped by pressing them against a centrifuge, with pressure carefully regulated to ensure that only optimally ripe cherries are processed. Harder cherries, whether underripe or overdried, are screened out. Approximately 50% of the mucilage remains on the beans before they are spread on drying patios or raised beds to begin the drying process.

To achieve the ideal humidity for processing, the coffee is occasionally finished in mechanical dryers at low temperatures, ensuring consistency and maintaining the integrity of the flavour profile.
