What impressed us with this coffee?

When a coffee like this one lands on the cupping table, it doesn’t just sit there quietly - it demands attention. Grown at a breathtaking 1900-2400 MASL, the altitude alone promises complexity, while the washed process brings clarity and brightness to the cup. It’s the kind of coffee that’s clean, sweet, and smooth - everything we want in a cup.

We chose this coffee because it’s a classic for a reason. It’s approachable yet exciting, familiar yet full of surprises. It’s the perfect “coffee lover’s coffee” - no tricks, just pure quality.

ABOUT THE COFFEE

This coffee is everything you’d expect from a top-tier Ethiopian coffee - and then some. Grown in the iconic Yirgacheffe region at breathtaking altitudes of 1900-2400 MASL, it delivers a clean, crisp cup that’s as elegant as it is delicious. The cherries are carefully handpicked by smallholder farmers and brought to the legendary Chelchele Washing Station, where they undergo the washed (wet) process. This method brings out the coffee’s clarity and brightness, allowing its natural sweetness to take center stage.

But let’s talk flavour because that’s where this coffee truly shines. With tasting notes of toffee, mild caramel and dried fruit, it’s like a dessert in liquid form. Expect a silky-smooth mouthfeel with a balanced acidity that makes every sip an experience. The toffee-like sweetness sticks around just long enough to make you crave another cup.

This is a coffee for both newcomers and connoisseurs. It’s approachable but far from ordinary. Our coffee roasting adventure began in 2021 when we decided to “roast it ourselves” for the Bulgarian AeroPress Championship. What started with a ROEST sample roaster quickly turned into something much more serious (and much more delicious). By 2024, we leveled up to the Stronghold S7 Pro because if we’re going to do magic, we might as well have the best wand in the game.

Every coffee in our selection has to pass the ultimate “Wow!” test at the cupping table and win at least 2 out of 3 votes from our team. No vote? No chance. Our head roaster, Hristo, is the mastermind behind every batch - a perfectionist who won’t rest until the cup feels like pure magic. And since we believe every cup can be better, every customer becomes a tester whose feedback we’re eager to hear. It’s how we keep getting better, one roast at a time.
