ABOUT THE COFFEE

Tucked away under the prestigious umbrella of the “Finca La Bolsa” group, managed by the ever-diligent Vides Farms, is the charming little gem known as Finca Los Pinos. Managed by none other than Elmer Lopez, this 24-hectare slice of paradise is perched at jaw-dropping heights, pumping out some of the region’s most spectacular beans. Boasting nearly 57,000 trees—mostly old-school varieties—this place is a traditionalist’s dream!

When it comes to processing their washed coffees, these guys take it to another level. They let their beans hang out in a dry ferment for a solid 36 hours before letting them chill on the patio for a sun-soaked 17 days. As for the naturals? Oh, they're picky in the best way! Only the ripest cherries make the cut, and they get a luxurious 17-21 day spa treatment on raised beds. Annually, this high-flying farm churns out a whopping 2200 quintales of cherry.

Meanwhile, back at the ranch, our green buyers are like caffeine-fueled detectives, combing through Guatemala’s vast coffee landscape for exceptional small lots. These aren’t just any coffees; they’re the crème de la crème, fetching top dollar and making it onto our exclusive offerings list as the best of the best. Trust us, these little batches are big deals!

WE ROAST ON ROEST

We embark on the adventure "Roasting coffee beans" with Roest. The idea was born while we were looking for competition coffee for the Bulgarian Aeropress Championship and we decided to roast it ourselves. As always, for us the goal is only one: uncompromising quality.

Every coffee we offer must be rated above 88 points and impress us at the cupping table.

Hristo is our head baker and searches for the perfect recipe for each coffee.
