Sumac is a versatile spice that adds sour and citrus notes to your cooking. It is particularly popular in and around the Mediterranean and Middle East kitchens, where spices are added to marinades, rubs and dips or sprinkled directly to the food before serving.
Sumac is one of the few spices that has a distinctly sour flavour and is used in the Middle Eastern kitchen just like vinegar, lemon or tamarind are used in other parts of the world. Sumac is part of the famous spice mix Za’atar and lends itself well in dressing for the delicious bread salad Fattoush.
Sumac grows in dense conical bunches on bushes and the berries are ready to be harvested when they reach a deep brick hue. These are then dried and ground to a coarse powder of a beautiful burgundy red colour. Mill&Mortar sumac is organic and is mixed with 3% salt before it is powdered. This is to facilitate the softening of the berries and ensure optimal preservation.
