What impressed us with this coffee?

The main reason why Hristo chose this coffee for the Bulgarian Aeropress Championship '23 is the classic profile, which further provokes the competitors to find a recipe that will stand out and the jury will choose their cup. Amazing aroma of rose with hints of milk chocolate and stone fruits.

ABOUT THE COFFEE

The Competition coffee for the Bulgarian AeroPress Championship ’23 sponsored by Cafe Imports and roasted by Drekka.

This coffee comes from a washing station called Derhi Fahmi in Guji. Deri is the name of the village, and Fahmi is the name of the first son of the Testi founder and CEO Mr. Faysel Abdos. This premium special prep lot is selected by using the ripest cherries and special attention paid to sorting, including an additional sort beyond the already top Grade 1 prep. Coffees in Ethiopia are typically grown on very small plots of land by farmers who also grow other crops. The majority of smallholders will deliver their coffee in cherry to a nearby washing station or central processing unit, where their coffee will be sorted, weighed, and paid for or given a receipt.
Coffee is then processed, usually washed or natural, by the washing station and dried on raised beds.The
washing stations serve as many as several hundred to sometimes a thousand or more producers, who deliver cherry throughout the harvest season: The blending of these cherries into day lots makes it virtually impossible under normal circumstances to know precisely whose coffee winds up in which bags on what day, making traceability to the producer difficult. We do, however, make every available effort to source coffee from the same washing stations every year, through our export partners and their connections with mills and washing stations. Typically farmers in this region don't have access to and therefore do not utilize fertilizers or pesticides in the production of coffee.

It is poured 3 times with a total of 200 g of water:
0:0-0:30 min: 50 g / 5 stirrings
0:30- 1:15 min: 50 g / 5 stirrings
1:15-2:00 min: 100 g / do not stir
2:00 min: turns and presses for 30 sec
Add 30 g of water

Every coffee we offer must be rated above 88 points and impress us at the cupping table.
