The Coffee

The Pacamara varietal thrives at 1,400 meters above sea level, shaded by citrus trees that provide both protection and a sustainable secondary income for the farmers. The cherries are hand-picked at peak ripeness and meticulously dried on raised beds in a natural process referred to as the ‘winey’ process. This method, developed by the Olmedo family, enhances the coffee’s complexity while maintaining a clean, balanced cup profile.
