FOR THE COFFEE

Tolima stands among Colombia's premier coffee regions, thanks to its ideal climate, high altitudes, and fertile soils. Since 2018, we've partnered with the area's leading producers, including the ASOPEP cooperative, La Roca Estate, and Tres Rayas, to showcase the very best of Tolima's harvests.

This Natural‑processed lot grown by the communities of Gaitania, Santiago Pérez, and Planadas. Once delivered to the drying stations at La Roca Estate and Tres Rayas, the cherries undergo meticulous hand‑sorting, flotation to remove defects, then three weeks of slow drying on raised beds—turned regularly and closely monitored to maintain just the right humidity.

Producers here farm between 1,600 and 2,100 m asl They cultivate classic varieties like Caturra, Typica, Castillo, Colombia, and Bourbon, alongside increasingly sought‑after cultivars such as Geisha and Wush Wush.

Under the leadership of award-winning producer Jorge Elías Rojas, ASOPEP and La Roca Estate have grown into Tolima's, and arguably Colombia's, most influential coffee cooperative.

Meanwhile, Tres Rayas Coffee is an up‑and‑coming association recently certified Organic, Fairtrade, Rainforest Alliance, and UTZ. They're also championing sustainability by converting coffee-processing waste into compost, which they then distribute back to local growers.

ABOUT Moklair

Moklair Coffee Roasters is a micro-roastery and coffee bar from Reims, France - right in the heart of the Champagne region. Founded in 2020 by competition-driven baristas Kévin David and Charity Cheung, Moklair spent a full year obsessing over roast precision before opening their doors to the public in early 2022. 

Their style is unapologetically light, clean, and high-definition, built around meticulous sourcing, disciplined roasting, and the belief that extraction is part of quality (not an afterthought). 

Competition is genuinely in their DNA: Moklair has collected 7 trophies in 3 years, including French Barista Champion (2022, 2025) and French Brewers Cup Champion (2022, 2024), plus a French Coffee in Good Spirits title in 2024.
