ABOUT THE COFFEE

Small producers living in Inzá work on plots of 1.8 ha – 2 ha and grow coffee to an altitude of 2100 m.
Coffee is traditionally processed here using the washed method. After harvesting, the coffee cherries are de-pulped and fermented for 20-40 hours, depending on the local environment. The coffee is then washed, the unripe beans removed, and the ripe coffee cherries are dried in parabolic dryers for 8 to 15 days, depending on the weather.

Father's Coffee Roastery, speciality coffee from Ostrava, Czech Republic.
The father roasts, the mother tastes and the growing children stand by and learn.
After their first cup of speciality coffee in 2013, they spent the next few years working in coffee shops around Ostrava, behind the bar as baristas, in the kitchen, in administration and wherever else was needed.
It was all great, but what they wanted was an experience abroad. The members moved to Berlin, where they got a job as baristas at Five Elephant. It was there that the first idea for Father's Roastery was born. Turning green coffee into brown seemed like magic. Two years later, the dream came true and the first batch of coffee was roasted under the name FATHER'S COFFEE.

With Drekka , we embark on the adventure of roasting specialty coffee with a lot of enthusiasm and desire. As always, we will be uncompromising with selection and quality.

Taf Coffee , Athens, is the roastery we have been working with for over seven years. They are always present in our selection.

Every month we present one or more guest roasteries , because we believe that one should constantly try new coffees and roasting profiles from the best bakeries in Europe.
