ABOUT THE COFFEE

This lot of El Refugio represents a “pure” natural process. After being carefully picked and density-sorted through flotation, the coffee cherries were spread in a single layer on drying beds. Over 22-26 days, they were meticulously turned 6-7 times daily to ensure even drying and preserve their exceptional quality.
