Five Spice is one of the most popular and classic spices in Asian cuisine and incorporates five flavours of the Chinese cuisine – sweet, sour, bitter, spicy and salty. The light anise-like taste is a hit with both children and adults.
Five-Spice is immensely suited to duck, where it can be used in a marinade brushed on the duck, and as a rub on the duck breast. Five Spice can also be used in cakes, especially for the classic Christmas charm that the spice lends can to chocolates and other confectionery.
The core of Five Spice in Mill&Mortar’s edition is made from fennel seeds and anise, which is enhanced by cloves, cinnamon and coriander. You can mix this blend with a little oil and brush directly it on the meat before frying, but it could certainly benefit from marinating for a couple of hours. The meat can be grilled or roasted in the wok. When the meat is done, a sprinkle of freshly chopped basil or terragon or chop will bring out all the flavours of your dish. A cucumber salad with coriander and a little chili fits perfectly with Five Spice marinated meat. Perfect for marinating all types of poultry (carrots of chicken, turkey or duck) and pork (roast, sirloin, minced meat, ribs or chops).
