La Esperanza Tabi II is a remarkable coffee from Tolima, Colombia, meticulously produced by Edward Giraldo and expertly processed by Jorge Rojas. This lot features the Tabi variety, known for its resistance to leaf rust and its exceptional cup quality.

The processing involves a two-step anaerobic fermentation: first, fermenting the whole cherries for 36 hours, followed by an additional 36-hour fermentation in mucilage. After washing, the beans are dried on raised African beds for 14 days, ensuring optimal flavor development. 

This meticulous process results in a coffee with deep, jammy flavors of blood orange and nectarine, complemented by a lively acidity. The dedication of Edward and Jorge is evident in the consistently delicious profiles they produce, making La Esperanza Tabi II a standout choice for coffee enthusiasts.
