What impressed us with this coffee?

This is our first coffee from Thailand, making it a small milestone for umaña. As we continue exploring new origins, we are constantly reminded that great coffee isn’t defined by reputation alone. This lot surprised us with its clarity, sweetness and balance, earning its place in our collection from the very first cupping.

FOR THE COFFEE

Thailand may not be the first country that comes to mind when you think of specialty coffee, but that’s changing quickly. Grown in the mountains of Chiang Rai at 1,450 metres above sea level, this lot is a wonderful example of the country’s growing reputation for producing expressive, fruit-forward coffees. Expect notes of tropical fruits, caramel and refreshing lemon iced tea in a cup that is both vibrant and beautifully balanced.

For this Anaerobic Honey process, only ripe cherries are selected before being fermented in sealed tanks with locally cultivated yeast. Once fermentation reaches the desired acidity, the cherries are pulped and dried slowly—first under the sun and then in temperature-controlled drying rooms until they reach the ideal moisture content. This careful process enhances sweetness and complexity while preserving remarkable clarity in the cup.

Sirinya Coffee Farm is a family-run farm, roastery and coffee shop led by Oil and Goh Chaosuwanwilai in Mae Suai, Chiang Rai. Beyond producing their own exceptional coffees, they work closely with neighbouring farmers, sharing knowledge on cultivation, processing and quality to help more producers access the specialty market. Their work builds on decades of coffee growing in northern Thailand, where coffee has become a sustainable alternative to opium cultivation and an important part of the region’s future.

Our coffee roasting adventure began in 2021 when we decided to "roast things ourselves" for the Bulgarian Aeropress Championship. What started with Roest quickly grew into something much more serious (and delicious). In 2024, we upgraded to Stronghold S7 Pro – because if we're going to make magic, let's do it with the best coffee roaster. Every coffee in our selection passes the "Wow!" test at the cupping table and must score at least 2 points to make the team (meaning it must be liked by at least two of our three team members). Our head roaster, Hristo, is the man behind every roasted bean – a perfectionist who won't approve a profile until the cup is magical. Every customer is a tester whose feedback we can't wait to read and hear so we can keep improving.
