Despite the extensive damage caused by coffee rust to the surrounding coffee plantations in recent years, the dedicated farmers of these two regions have preserved their production of high-quality Bourbon and Caturra coffee varieties.
To showcase the fruits of their labor, Edelmira and the farmers worked together to carefully select the best Red Bourbon and Yellow Caturra cherries from their first harvests, meticulously creating this exclusive batch that is Alturas Del Triunfo.
As for the process used for this coffee, each evening, the coffee cherries were collected and floated into the communities’ washing stations. After a 12-hour night of oxidation, the coffee was pulped, followed by a 24-hour fermentation period in the open air. Then it was carefully washed and finally dried in an open-air patio for a period of 12 days.
At each stage of the process, Edelmira helped farmers control the main quality parameters to ensure consistency in the quality of the coffee.
