FOR THE COFFEE

Bruno Mierisch Boettiger was a German engineer hired by Nicaragua in the late 19th century for infrastructure projects. After the government compensated him with land, he established Finca Sajonia in El Arenal, a region now home to the Mierisch family's coffee farms.

Recognizing the potential of coffee under President José Santos Zelaya's export-driven policies, Bruno planted his first coffee trees in 1908. He benefited from Nicaragua's early adoption of mechanical depulpers, improving processing efficiency. His son Wilfrido Mierisch expanded the family's coffee holdings by acquiring neighboring farms Las Lajas and Los Placeres.

Today, Fincas Mierisch is a renowned specialty coffee producer, managed by Bruno's grandson Dr. Erwin Mierisch Buitrago (3rd generation) and great-great-grandson Erwin “Wingo” Mierisch Jackman (5th generation). The family continues to innovate in coffee cultivation, processing, and sustainability, building on Bruno's pioneering legacy.

ABOUT Goût & Co

Goût & Co is a Chengdu-based micro-bakery dedicated to working with rare and meticulously selected micro-lots, each with a distinct terroir. Behind the brand is Tong, a robotics engineer who has transformed his scientific precision and competitive experience into his own style of baking. His accolades include:

- 3rd place in the France Latte Art Championship,
- 5th place in France Cup Tasters,
