Murcia paprika has an intense red colour and a delectable, powerful taste of sweet peppers. Murcia is one of two regions in Spain that has a PDO (Protected Designation of Origin) quality certification on their peppers.
A classic in Spanish cuisine and in everyday stews, omelettes, fish and vegetable dishes, Murcia paprika is made from dried and powdered red round Bola peppers. Both stems and kernels are removed from these PDO protected peppers, giving them a defined intense red colour. This paprika can be cooked in the dish or sprinkled in the end. When burnt, as often done with curry, it imparts a bitter flavour.
