Taith is proud to feature this stunning Sidra variety from El Diviso, a farm in Colombia led by Nestor Lasso and his brother Adrian. Motivated by a shared passion for experimentation and exceptional quality, the brothers transitioned their family farm into specialty coffee production and partnered with Johan Vergara to establish El Diviso. Together, this dedicated team has gained a reputation for producing some of the region’s most exciting and innovative coffees.

This particular lot is naturally processed and showcases the meticulous care of the El Diviso team. The process begins with careful hand-harvesting of ripe cherries, followed by a 12-hour oxidation phase at a maximum of 25°C. This is succeeded by a 50-hour anaerobic fermentation. The cherries then undergo a second 20-hour oxidation in open air, followed by a final 30-hour anaerobic fermentation.

To intensify flavor development, the cherries are then submerged in a bath of coffee must—a liquid rich in sugars and compounds created during earlier oxidation phases. Finally, the cherries are dried slowly in a masquesina until their moisture content stabilizes at 11%, locking in complexity and clarity in the cup.
