FOR THE COFFEE

Lost Origin Coffee Lab was founded by craft brewer Franz Zeimetz, who applies his brewing expertise to coffee fermentation. The lab is equipped with custom fermentation tanks, drying rooms, and a dedicated microbiology team to ensure strict control of the fermentation process.

About process:Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-007P. A fermentation medium (LOM-111) was used at a volume of 53 liters, representing a 16% concentration. The process lasted 5.9 days under controlled conditions in an average temperature of 14.66°C. The coffee was dried over 12.5 days in temperature and humidity-regulated drying rooms.
