FOR THE COFFEE

Coffee farming is a close connection for Yolanda Cabrera Álvarez. The daughter of coffee farmers, Yolanda has passed on her passion for coffee farming to her own children, who are now adults and help her on the farm.

The high altitude of 2,150 meters above sea level maintains cool temperatures, which helps limit the spread of pests and diseases. Yolanda receives technical assistance from Valle Inca to help her produce high-yield coffee trees with unique characteristics.

Yolanda and her family selectively hand-pick ripe red cherries and process them on their farms. They pulp and anaerobically ferment the coffee in sealed GrainPro bags for 40 hours. The cooler temperatures at this high altitude slow fermentation. After fermentation, they wash the parchment in clean water and place it on drying beds to dry. They rake the parchment frequently to ensure even drying. The parchment takes approximately 15 days to dry.

ABOUT Dalston

Dalston Coffee traces its roots back to East London, where founder Borja first discovered his love for specialty coffee while working as a chef. That passion eventually led him to open a small café in the heart of Raval, Barcelona - a cozy spot that quickly became a local favourite.

Six years into their journey, the Dalston team wanted their packaging to better reflect their story and identity. They partnered with designer Ingrid Picanyol, who helped shape a visual narrative around the concept of neighbourhood. As she explains: “Where did Dalston Coffee originate? Dalston. And what is Dalston? A neighbourhood. And what is a neighbourhood? A group of houses.”

Each coffee in their lineup is imagined as a house within this colourful neighbourhood. The vibrant packaging, topped with roof-like graphics, is a playful nod to the awning of the original Dalston café in London - the very place where Borja’s coffee journey began.

We’re thrilled to feature Dalston Coffee as our next guest roaster - a small but mighty team with a big love for storytelling, community, and beautifully crafted coffee.
