This remarkable low-caf Typica from Angie Hernandez at Finca Los Nogales left DAK amazed when they first tasted it - they could hardly believe it had undergone a caffeine reduction process! With vibrant notes of tropical fruits, raspberry, and a hint of rosemary, this coffee offers an exciting and flavorful profile.

The caffeine reduction process involves multiple meticulous steps. First, only ripe cherries are hand-selected, then disinfected with treated water to ensure quality. Next, they are sorted by density and then undergo a unique 90-hour fermentation using pre-ferments, similar to sourdough, which enhances the coffee’s distinct flavors. Following this, a natural solvent derived from coffee pulp is added through enzymatic and fermentation processes to extract caffeine. The beans soak in this solvent for 48 hours, allowing caffeine to dissolve. Afterward, the beans are washed again, dried for eight days to achieve optimal moisture, and prepared for packing. This carefully executed process preserves the exceptional taste and quality of the coffee while reducing its caffeine content, making it a truly unique experience in every cup.
