What Makes This Coffee Special?
This lot undergoes a washed tartaric process, also referred to as double anaerobic fermentation. The cherries experience two separate anaerobic stages, enhancing the complexity and depth of flavor.
Processing Steps:
🔸 Cherries are sealed in bags at room temperature for 60 hours (first anaerobic phase)
🔸 Pulped and left to oxidate naturally
🔸 Placed in sealed bags again for another 60 hours (second anaerobic phase)
🔸 Remaining mucilage is washed off, followed by 12-15 days of drying
