Honey Processed Lot – Finca La Hondurita by Fito Montiel

This exceptional honey processed coffee comes from Finca La Hondurita, a small 4.3-hectare farm owned by Fito Montiel in Chalatenango, El Salvador. Grown at elevations between 1,500 and 1,550 meters, this lot reflects both the rich terroir of the region and a deeply intentional approach to processing.

Like many producers working with extended fermentation techniques, Fito’s exact methods are a closely guarded family secret but here’s what we can share:
• The process begins with the selective harvesting of perfectly ripe cherries.
• These cherries then undergo a controlled fermentation lasting 192 hours, aided by carefully cultivated cultures of fungi and bacteria.
• After fermentation, the coffee is slow-dried on raised beds for approximately 30 days, allowing flavors to fully develop.
• Once dried, the coffee is rested for at least 60 days before undergoing final milling and export preparation.

The result is a complex and refined cup, showcasing the meticulous care and craft behind every step. A beautiful example of innovation, tradition, and terroir coming together in perfect harmony.
