FOR THE COFFEE

Frinsa Estate is a single-farm cooperative in Java, Indonesia, whose coffees have long impressed QUO Coffee with their vibrancy and distinctive character. This particular lot—both in varietal and processing method—adds a unique dimension to their lineup.

Processed as an Extended Fermentation Honey with the addition of the microbial culture Saccharomyces cerevisiae, the depulped coffee undergoes an extended wet fermentation before washing. The yeast plays a role in breaking down amino acids, while having less effect on sugars, resulting in a caramel-like sweetness.

In the cup, expect dried apricot sweetness, juicy red fruit notes reminiscent of concord grape juice, and a light, complex body with subtle tannins, akin to white tea.
